Melter honey is a by-product of purifying the beeswax. It is the last of the honey to get separated from the wax and in doing so has been subject to high heat. This heat turns the honey very dark and gives it a caramelized flavor. This product is not recommended as a substitute for regular, raw honey. However, it does have appealing uses in mead-making, brewing, and baking.

The melter honey I ordered from Gardner was perfect for the bochet-cyser hybrid mead I'm making! It was an excellent deal and I'll have no issue with buying more in the future. They also threw in a couple of samples of honey! I've been hesitant to dive into buckwheat but after getting their sample, I'll end up having to buy some of that to!
I bought a bucket of melter honey for use in mead-making. This is definitely a special-purpose item - don't buy it thinking you'll use it like other honey. My intent was to use it in small amounts to add complexity to meads made with other honeys. I expected flavors of toffee and other caramelized sugars. I did not expect the intense cocoa flavors it has. New plan: part of this bucket will get used solo in its own batch of mead. Incredibly yummy stuff.
I originally bought the 2 gallon bucket for brewing, but never got around to using it. Recently started baking and broke out the stored honey. What a gem! Besides the caramel notes from toasting, there remains a citrus taste which surprised me. Can't believe I waited this long to taste it, but it will be going into some raisin sourdough loaves today! Incredible value for bakers and a responsible way to save the viable honey.
